It’s getting chilly out there and you know what that means; 'tis the season for cuddling up by a crackling fire after a long day at work, wrapped in a blanket with a steaming cup of hot cocoa. Whether you like it as is or filled to the brim with whipped cream and marshmallows, we have a recipe that will make this winter treat even sweeter and more decadent. Simply add one of our Peppermint Bark Snackadabra Cookie Cups and a splash of your favorite liqueur! Try this grown-up hot cocoa as a nightcap after the kids have gone to bed or with your partner on a snowy Sunday afternoon.
Serves 2 (will fill 2 cookie cups and 2 mugs)
1 1/2 cups whole milk
3/4 cups cream or half and half
1/8 cup cocoa powder
2 oz milk chocolate, chopped
1/6 cup sugar
¼ teaspoon cinnamon
1/8 teaspoon vanilla extract
Pinch of salt
2-4 ounces of marshmallow (or vanilla, cake, whipped cream) vodka (substitute out for Kahlua, Bailey's, whiskey, rum, a sweet red wine etc.)
In a large bowl, mix together cocoa powder, sugar, cinnamon and salt. Heat a large saucepan over medium heat and add milk and cream. Bring to a simmer, stirring every few minutes.
Add 2-3 tablespoons of the milk to the cocoa and sugar, mixing thoroughly to create a paste. Once the entire thing is wet, use a spatula to add it to the milk and turn the heat down to low. Whisk continuously until smooth (do not let it boil), the whisk in chopped chocolate and vanilla extract.
Remove from heat and whisk in vodka (or drink of choice), or add to mixture right before serving. Pour carefully into cookie cup, using ladle if needed, and top with a dollop of whipped cream or a few mini marshmallows. Enjoy and happy holidays from all of us here at Snackadabra!
