You know that glorious feeling of waking up in the morning and realizing that everything is covered in a beautiful white blanket?! Working from home on a snow day is a northeastern treasure.
First order of business...breakfast of course! If you can't decide between savory and sweet why not have both? Cinnamon raisin French toast and scrambled eggs coming right up!
Grab a bowl, add two eggs, ½ tsp. cinnamon, ½ tsp. vanilla, a dash of pink himalayan salt , splash of water, and 2 tsp. sugar. Whisk with a spoon and then pour over slices of cinnamon raisin bread. Let this soak in a big bowl for 10 - 15 min.
Heat up griddle pan with butter or ghee. Add soaked slices of bread and flip after about 2 min. or until golden brown.
Chop Tomatoes, add them to skillet with 1 tsp. minced garlic. Season with salt and pepper. In a separate bowl whisk 2 eggs with salt, pepper and a splash of water (this always makes eggs superbly fluffy). After about 2 minutes on high heat, add the egg mixture to the sizzling tomatoes. Scramble until the eggs solidify.
*If you feel like really treating yourself, sprinkle some shredded cheese and allow it to melt.
Plating is key - people eat with their eyes first!
Place the French toast on a plate, drizzle with warm maple syrup (we recommend Whistle Pig), gooey raspberry jam and blood orange slices. Then, top the omelette with fresh cilantro and hot sauce if you're a fan of turning up the heat (we recommend Cholula). Bon Appétit!

½ tsp. Cinnamon
½ tsp. Pure Vanilla Extract
2 tsp. Sugar
Maple Syrup (we recommend Whistle Pig)
1 Blood Orange - for garnish
Pink Himalayan Salt
1 tsp. Minced Garlic
Cilantro - for garnish
Hot Sauce (we recommend Cholula)
